Mack's Famous $100 Chili

Welcome to Mack’s Famous $100 Chili — a bold, slow-simmered, football-ready pot of Texas-style comfort that earns its name honestly. Every batch comes with rich bacon fat, layered peppers, deep tomato flavor, and a heavy-handed charge of Rhino Red Chile de Arbol.

One bite in, and the answer is hell yes.

Ingredients

  • ½ lb bacon

  • 2 lbs ground beef

  • 1 roasted poblano pepper, peeled & diced

  • 2 jalapeños, seeded & diced

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced
  • 1 medium yellow onion, diced

  • 4 cloves garlic
  • ½ cup RhinoSaucerous Texas Chili Blend

  • 1 (6 oz) can tomato paste

  • 2 tbsp Rhino Red Chile de Árbol Hot Sauce

  • 2 cups water

  • ¼ cup beef base (Better Than Bouillon – Roasted Beef preferred)

  • 1 (28 oz) can Crushed San Marzano tomatoes

  • 1 (15 oz) can pinto beans in chili sauce

  • 1 (15oz) can black beans
  • 1 (15oz) can white beans
  • 1 (15oz) can dark red kidney beans
  • ⅓ cup brown sugar

Method of Preparation

  1. Prep everything first.
    Medium dice bacon. Small dice peppers and onion. Rinse kidney beans. Mix beef base in water.  Crush Garlic. 

  2. Build the base.
    In a large pot over medium heat, cook bacon until crispy. Add ground beef and cook until browned. Drain half the fat and return to heat.

  3. Veggie charge.
    Add onions, poblano, jalapeños, and red bell pepper. Sauté 3–4 minutes until halfway cooked.

  4. Bloom the spice.
    Add RhinoSaucerous Texas Chili Blend and stir constantly for ~30 seconds.

  5. Deepen the flavor.
    Add tomato paste and Rhino Red hot sauce. Cook 4–5 minutes until darkened and slightly sticking to the pot — adjust heat to avoid burning.

  6. Deglaze.
    Dissolve beef base in warm water. Add to pot and scrape up all the good stuff from the bottom.

  7. Bring it home.
    Add tomatoes, beans, and brown sugar. Stir well.

  8. Simmer & wait.
    Simmer at least 30 minutes — up to 3 hours — stirring occasionally.

  9. Next-day magic.
    For best results, refrigerate overnight and reheat. Flavor gets meaner.

How to Serve It 🌶️🧀

For the adventurous and slightly unhinged: serve this chili over white rice, mashed potatoes, or spaghetti noodles — a bold move made famous by those Cincinnati maniacs who refuse to respect chili boundaries

Top with a whole mess of Tillamook Sharp Cheddar Cheese and MORE Rhino Sauce!!

And yes — this chili absolutely comes with beans.
